Chicken Chow Mein

  1. In a medium bowl, combine chicken, pork, garlic, 1 tbsp peanut oil, soy sauce and brandy. Cover and chill for 3 hours, or overnight.
  2. Heat 1/2 tbsp peanut oil in a wok or large frying pan. Working in batches, stir-fry chicken and pork mixture until browned. Set aside. Add remaining oil to wok and stir-fry carrot, pepper, green onions and celery until carrot is just tender. Add shrimp and cabbage. Stir-fry until cabbage is almost wilted. Return chicken mixture to wok. Whisk together cornstarch and chicken stock then add to pan along with oyster sauce. Bring to a boil and cook until thickened slightly.
  3. Serve topped with fried noodles.
