Chicken Chow Mein
- 1 lb chicken thighs, thinly sliced
- 7 oz pork tenderloin, thinly sliced
- 1 clove garlic, minced
- 2 tbsp peanut oil
- 2 tsp soy sauce
- 1 tsp brandy
- 1 None small carrot, peeled, sliced
- 1 None medium red pepper, sliced
- 4 None green onions, chopped
- 2 stalks celery, trimmed, sliced
- 7 oz raw shrimp, peeled, deveined, chopped
- 1/2 None medium Chinese cabbage, shredded
- 1 tsp cornstarch
- 1/2 cup chicken stock
- 1 tbsp oyster sauce
- 3.5 oz fried noodles
- In a medium bowl, combine chicken, pork, garlic, 1 tbsp peanut oil, soy sauce and brandy. Cover and chill for 3 hours, or overnight.
- Heat 1/2 tbsp peanut oil in a wok or large frying pan. Working in batches, stir-fry chicken and pork mixture until browned. Set aside. Add remaining oil to wok and stir-fry carrot, pepper, green onions and celery until carrot is just tender. Add shrimp and cabbage. Stir-fry until cabbage is almost wilted. Return chicken mixture to wok. Whisk together cornstarch and chicken stock then add to pan along with oyster sauce. Bring to a boil and cook until thickened slightly.
- Serve topped with fried noodles.
