Smoked Salmon And Goat Cheese French Toast
- 1 None ciabatta loaf
- 2 None large eggs
- 1/2 cup milk
- 2 tbsp butter
- 1 None lemon, zested, juiced
- 2 tbsp olive oil
- 2 tbsp chopped toasted hazelnuts
- 1 None avocado, cut into wedges
- 3 cups baby arugula
- 3 oz goat cheese, crumbled
- 100 g smoked salmon slices, halved
- Trim and discard ends of ciabatta loaf. Cut into eight 1/2-inch-thick slices. Use a 3-inch cutter to cut circles from each slice. Whisk together eggs and milk in a bowl. Melt butter in a large skillet on medium heat.
- Dip ciabatta rounds into egg mixture, allowing excess to drain off. Cook in batches for 1-2 mins each side until lightly golden.
- Combine lemon juice, olive oil and chopped hazelnuts in a small bowl; set aside.
- Arrange avocado, argula, and a round of toast on each serving plate. Top toast with goat cheese, salmon, and lemon zest. Drizzle with hazelnut mixture; season and serve.
