Smoked Salmon And Goat Cheese French Toast

  1. Trim and discard ends of ciabatta loaf. Cut into eight 1/2-inch-thick slices. Use a 3-inch cutter to cut circles from each slice. Whisk together eggs and milk in a bowl. Melt butter in a large skillet on medium heat.
  2. Dip ciabatta rounds into egg mixture, allowing excess to drain off. Cook in batches for 1-2 mins each side until lightly golden.
  3. Combine lemon juice, olive oil and chopped hazelnuts in a small bowl; set aside.
  4. Arrange avocado, argula, and a round of toast on each serving plate. Top toast with goat cheese, salmon, and lemon zest. Drizzle with hazelnut mixture; season and serve.
