Rich Beef Casserole
- 1 1/2 lb beef, diced
- 1 tbsp all-purpose flour
- 1 tbsp olive oil
- 8 None pearl onions, peeled
- 2 None carrots, thickly sliced
- 1 cup red wine
- 1 cup beef stock
- 2 tbsp tomato paste
- 2-3 sprigs fresh thyme
- 1 None bay leaf
- 1 lb baby potatoes
- 1/2 lb small button mushrooms
- None None chopped fresh parsley, to serve
- None None steamed green beans (optional), to serve
- Preheat oven to 350u0b0F. Toss together beef and flour.
- Heat olive oil in a large Dutch oven over high heat. Working in batches, cook beef for 3-5 mins, until browned. Add onions and carrots. Cook for 5 mins, until golden brown. Add wine, stock, tomato paste and herbs. Season to taste. Bring to a boil, cover then transfer to oven for 1 hour.
- Add potatoes and mushrooms. Cook for another 30 mins, until beef is very tender. Sprinkle with parsley and serve with steamed green beans, if desired.
