Pecan Macadamia Bars
- 8 oz butter cookies, crumbled
- 9 tbsp butter, melted
- 14 oz can condensed milk
- 1/3 cup brown sugar
- 2 tbsp golden syrup
- 5 oz pecans, halved lengthwise
- 5 oz macadamia nuts, halved
- 2 oz dark chocolate, melted
- Preheat oven to 375u0b0F. Lightly grease and line an 8 x 10 inch baking dish, extending paper 1 inch above edges on long sides. For the pastry base, process cookies in a food processor until fine crumbs form. Add melted butter and pulse to combine. Press firmly into pan.
- For the topping, combine condensed milk, brown sugar and golden syrup in a medium saucepan. Stir over low heat 8-10 mins, until golden. Stir in nuts and pour on to pastry base. Bake 8-10 mins, until golden. Cool in pan on a wire rack. Drizzle with melted chocolate and cut into rectangles to serve.
