Greek Lamb Skewers
- 6 None baby potatoes, halved
- 1 lb lamb leg steaks, cubed
- 1 medium red onion, cut into thin wedges
- 1 medium yellow pepper, cubed
- 2 tbsp vegetable or olive oil
- 2 cloves garlic, crushed
- 2 tbsp chopped oregano, plus additional leaves for garnish
- 1 tbsp rosemary leaves
- 12 None pitted black olives
- 1/4 cup crumbled feta cheese
- None None Mixed green salad, to serve
- Place potatoes in a medium saucepan and cover with cold water. Bring to a boil. Boil 10 mins or until just tender. Drain. Cool slightly.
- Thread lamb, potato, onion and pepper onto 12 skewers. Place skewers on a baking pan.
- Preheat the grill to medium heat. Mix oil, garlic, oregano and rosemary in a small bowl. Season. Drizzle over skewers, turning to coat.
- Grill the skewers for 12-15 mins, turning, or until browned and lamb is cooked to desired doneness. Transfer to a serving plate. Thread an olive at the tip of each skewer. Sprinkle with feta and additional oregano. Serve with salad.
