Shortbread Stars
- 2 1/3 cups flour
- 2 tbsp rice flour
- 1/2 cup powdered sugar, plus extra, for dusting
- 18 tbsp butter, at room temperature, diced
- 1 oz white and dark chocolate pastilles
- None None edible silver balls, to decorate (optional)
- Preheat oven to 325u0b0F. Line 2 baking sheets with parchment paper. For the dough, sift flours and powdered sugar into a bowl. Using fingertips, rub in butter until the mixture resembles breadcrumbs. Press together into a ball.
- Turn out onto a floured surface and knead gently. Roll out between 2 sheets of parchment paper, to 2 inch thickness. Using a 2 inch cookie cutter, cut out 30 stars. Arrange on prepared baking sheets and bake 15-20 mins, until lightly golden. Cool 5 mins on baking sheets and press a chocolate pastille into each. Decorate with silver balls, if using, and transfer to a wire rack to cool completely. Dust with powdered sugar. Serve or store in an airtight container for up to 2 weeks.
