Grilled Calamari, Mango Salad And Crispy Shallots
- 2 None small green chilies, deseeded
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp palm sugar, grated
- 2 None mangoes, diced
- 2 None spring onions, sliced
- 1 1/4 cups fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/2 cup cashews, toasted
- 1 tbsp oil
- 1 lb calamari, cleaned, halved lengthwise and insides scored in a diamond pattern
- 4 None shallots, sliced and deep-fried
- Combine green chilies, fish sauce, lime juice and palm sugar in a food processor. Process until smooth. Toss with mango, spring onion, cilantro, mint and cashews.
- Preheat grill or broiler. Coat calamari in oil then cook for 2-3 mins. Serve with mango salad, sprinkled with crispy shallots.
