Thai Beef With Noodles
- 7 oz vermicelli noodles
- 1 tbsp peanut oil
- 1 2/3 lbs beef sirloin steak
- 1 medium onion, sliced
- 8 oz snow peas
- 2 cups bean sprouts
- 4 None green onions, chopped
- 12 oz baby bok choy, chopped
- 2 small fresh red chili peppers, finely chopped
- 1 piece (1 1/2 inches) ginger, thinly sliced
- 1 small cucumber, thinly sliced
- 2 tbsp fresh cilantro leaves
- None None FOR THE DRESSING
- 1/4 cup lime juice
- 1/4 cup light soy sauce
- 2 tsp fish sauce
- 2 tbsp mild sweet chili sauce
- 2 tsp sugar
- 2 tsp tomato sauce
- For the dressing, whisk all ingredients in a small bowl.
- Place noodles in heatproof bowl; cover with boiling water. Let stand for 5 mins; drain.
- Heat oil in wok or large skillet on high heat. Cook beef until browned on both sides and tender. Remove from wok. Cool then cut into thin slices.
- Add onion to wok; stir-fry until lightly browned. Add snow peas, bean sprouts, green onions, bok choy, chili peppers and ginger; stir-fry for 2 mins. Return beef to wok with noodles, cucumber and dressing; toss until heated through. Sprinkle with cilantro.
