Apricot And Honey Soufflés
- 1/4 cup granulated sugar
- 4 medium fresh apricots
- 2 tbsp honey
- 4 None egg whites
- 1 tbsp powdered sugar
- Preheat the oven to 350u0b0F. Grease six 3/4-cup souffle dishes. Sprinkle the inside of the dishes with a little of the granulated sugar; shake away the excess. Place the dishes on a baking pan.
- Place the apricots in a small heatproof bowl; cover with boiling water. Let stand for 2 mins. Drain, then cool for 5 mins. Peel, pit and finely chop the apricots.
- Combine the apricots in a small saucepan with the remaining granulated sugar, 1/4 cup water and honey; bring to a boil. Reduce the heat to low; simmer, uncovered, for about 10 mins or until the apricots soften to a jam-like consistency.
- Beat the egg whites in a medium bowl with an electric mixer until soft peaks form. Gradually beat in the hot apricot mixture until just combined. Spoon the mixture into the prepared dishes.
- Bake the souffles for about 15 mins. Serve immediately, dusted with sifted powdered sugar.
