Winter Squash, Cheese And Spinach Strudel
- 1 1/4 lb winter squash, peeled, cut into 1 inch pieces
- 2.5 oz baby spinach
- 1 oz cheddar cheese, grated
- 2.5 oz feta cheese, crumbled
- 8 sheets filo dough
- 3 1/2 tbsp butter, melted
- 2 tsp poppy seeds
- None None steamed green beans, to serve
- Preheat oven to 350u0b0F. Grease an 8 inch springform pan. Steam winter squash over simmering water for 10-12 mins, or until tender. Drain. Return to pan and cook over medium heat until dry then mash. Add spinach and cook over medium heat for 2-3 mins, or until spinach wilts. Add cheddar cheese. Let cool then add feta.
- Lightly brush 4 sheets of filo dough with butter. Add another sheet of filo dough to each buttered sheet. Distribute filling in a thin line lengthwise along edge of each stack then roll up to enclose filling. Starting at the center of prepared pan, carefully coil rolls, seam-side down, joining each roll to the end of the last and coiling it around the previous roll until the pan is filled.
- Brush top with remaining butter and sprinkle with poppy seeds. Place pan on a baking tray and bake for 25-30 mins, or until golden. Serve with beans.
