Feta, Smoked Chicken, Preserved Lemon And Green Tomato Tarts
- 18 oz puff pastry
- 1 None small egg, lightly beaten with a pinch of salt
- 7 oz feta or soft goat cheese, sliced
- 1 None large green tomato, diced
- 3/4 None preserved lemon, pulp discarded, rinsed, thinly sliced
- 1 tbsp chopped fresh dill
- 2 tbsp lemon-infused extra virgin olive oil
- 2 None skinless smoked chicken breasts, diced
- 1 cup fresh garden cress
- Preheat oven to 425u0b0F.
- Roll pastry out to 1/4 inch thick. Cut out 6 - 4 1/2 inch squares. Place on a baking sheet lined with parchment paper and prick all over with a fork. Cut remaining dough into strips. Brush edges of pastry squares with beaten egg. Lay pastry strips around edges, cutting to fit. Place cheese in the middle of pastry squares. Bake for 15-20 mins, until golden brown.
- Meanwhile, combine tomato, preserved lemon, dill and lemon-infused oil. Season. Add chicken and toss to combine. Spoon on top of tarts and add a pinch or two of garden cress. Serve immediately.
