Triple Chocolate Cheesecake

  1. Preheat oven to 425u0b0F. Place cookies in a food processor and process into crumbs. Add butter and process until combined. Press evenly into the base of an 8 inch springform pan. Chill 15 mins.
  2. For the filling, beat the cheese, eggs, sugar and vanilla with an electric mixer until smooth. Divide mixture in half. Beat dark chocolate into one portion and white chocolate and liqueur into the other. Pour dark chocolate mixture into cake pan over cookie base. Add white chocolate mixture and smooth the surface with a spatula. Bake 10 mins, then reduce oven temperature to 275u0b0F and bake 40-50 more mins, until firm. Cool in pan.
  3. Meanwhile, for the chocolate topping, add chocolate, butter and oil to a heatproof bowl. Set over a pan of gently simmering water and stir until smooth. Spread on cheesecake. Chill 1 hour, until set. Slice and serve.
