Three Cheese Turnovers
- 1 tbsp olive oil
- 6 None green onions, sliced
- 1 clove garlic, crushed
- 1/2 cup ricotta
- 1 cup feta, crumbled
- 1/4 cup Parmesan cheese, grated
- 1/4 cup fresh flat leaf parsley, chopped
- 2 tbsp chopped fresh mint
- 1/2 tsp ground nutmeg
- 2 None large eggs, beaten
- 3 sheets ready-rolled puff pastry
- None None salad, to serve
- Preheat oven to 400u0b0F. Line a baking tray with baking paper.
- Heat oil in a frying pan. Saute green onions and garlic for 1 min. Transfer to a large bowl.
- Add cheeses, herbs, nutmeg and eggs to bowl and mix. Season to taste.
- Cut each pastry sheet into 4. Place 1 heaped tbsp filling in center of each square. Wet edges with a little water and fold over to form a triangle. Press edges together and seal with a fork. Place on prepared tray and cut a small slit in each turnover.
- Bake for 10-15 mins, until golden. Serve with salad.
