Hoisin Pork
- 1/2 cup hoisin sauce
- 1/2 cup chicken stock
- 1 clove garlic, minced
- 1 tsp chopped chili pepper
- 1 tsp grated fresh ginger
- 1 lb pork tenderloin, trimmed, sliced
- 1 tbsp olive oil
- 1 None red onion, sliced
- 1 bunch pak choy, quartered
- 1 bunch Chinese broccoli, chopped
- 1 tbsp fresh cilantro + extra, to serve
- None None steamed rice or noodles, to serve
- Combine hoisin sauce, stock, garlic, chili and ginger. Arrange pork in a shallow dish. Cover with marinade, turning to coat well. Cover with plastic wrap. Chill for at least 20 mins to marinate, basting occasionally.
- Heat oil in a wok or frying pan over high heat. Working in batches, stir-fry pork for 2-3 mins, until browned. Set pork aside. Reserve marinade.
- Add onion to wok and stir-fry for 1 min. Return pork to wok along with pak choy, broccoli, cilantro and marinade. Stir-fry for 2 mins.
- Serve pork with steamed rice or noodles. Sprinkle with extra cilantro.
