Winter Cabbage And Beef Soup
- 2 Tbsp. oil
- 1/2 medium white onion, chopped
- 2 stalks celery, chopped
- 1 lb. lean ground chuck
- 1/2 tsp. granulated garlic
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. Tabasco sauce
- 1 Tbsp. fresh chopped oregano
- 2 c. cooked kidney beans or 1 (16 oz.) can
- 1/2 head cabbage, sliced
- 1 (28 oz.) can diced, chopped tomatoes
- 5 c. beef stock or use bouillon
- 1 (6 oz.) can tomato paste
- In a large stock pot or Dutch oven, saute onion and celery in oil until soft.
- Add ground chuck and brown.
- Add remainder of ingredients and bring to a boil.
- Reduce heat.
- Cover and simmer for 1 hour.
- Serves 6 to 8.
