Blueberry And Lemon Financiers
- 6 large egg whites, at room temperature
- 11 tbsp butter, melted, cooled
- 1/4 cup, plus 1 1/2 tsp powdered sugar, plus more for dusting
- 1/3 cup, plus 6 3/4 tsp ground almonds
- 1/2 cup, plus 1 1/2 tsp plain flour
- 1 tsp finely grated lemon zest
- 1 tbsp lemon juice
- 3/4 cup frozen blueberries, thawed
- Preheat oven to 400u0b0F. Grease a 12-cup oval friand pan or mini-muffin pan.
- Whisk egg whites in a bowl with a fork until frothy. Add butter, sifted powdered sugar, ground almonds, flour, zest, juice and half the blueberries; stir until combined.
- Spoon mixture into prepared pan. Sprinkle tops with remaining blueberries. Bake for 20 minutes or until a skewer inserted at center comes out clean. Cool in pan for 5 minutes.
- Transfer to a wire rack to cool completely. Dust with powdered sugar. Serve.
