Blueberry And Lemon Financiers

  1. Preheat oven to 400u0b0F. Grease a 12-cup oval friand pan or mini-muffin pan.
  2. Whisk egg whites in a bowl with a fork until frothy. Add butter, sifted powdered sugar, ground almonds, flour, zest, juice and half the blueberries; stir until combined.
  3. Spoon mixture into prepared pan. Sprinkle tops with remaining blueberries. Bake for 20 minutes or until a skewer inserted at center comes out clean. Cool in pan for 5 minutes.
  4. Transfer to a wire rack to cool completely. Dust with powdered sugar. Serve.
