Coconut Lime Panna Cotta With Caramelised Bananas
- 1 cup milk
- 3/4 cup coconut milk (not low-fat)
- 1/4 cup packed brown or palm sugar
- 3 tsp powdered gelatin
- 1/3 cup just-boiled water
- None None Finely grated zest and juice of 1 lime
- None None Toasted shredded coconut, to serve
- None None For the Caramelized Bananas
- 4 None small bananas, sliced thickly on angle
- 2 tbsp packed brown sugar
- 2 tsp unsalted butter
- In a saucepan, combine milk, coconut coconut milk and sugar. Bring to boil on high, stirring. Cool to room temperature.
- In a bowl, using a fork, whisk gelatin briskly into water until dissolved. Stir in lime zest and juice. Cool slightly but do not allow to set. Whisk into milk mixture and chill.
- Pour evenly into four chilled, 4-oz dishes or small rice bowls. Chill 1 hour, until set.
- To make Caramelized Bananas; preheat broiler to high. Arrange banana pieces on a foil lined broiler pan. Sprinkle with sugar and dot with butter. Broil 2-3 minutes, watching closely until golden and caramelized.
- Unmold panna cottas onto serving plates. Sprinkle with coconut and serve with bananas.
