Chocolate Macadamia Bites
- 475 g dark chocolate
- 125 g + 2 tbsp butter
- 4 None eggs
- 150 g plain flour
- 300 g caster sugar
- 100 g brown sugar
- 1 pinch salt
- 1 tsp ground espresso coffee beans
- 1 1/2 tsp vanilla extract
- 75 g mini meringues, roughly chopped
- 200 g roasted, salted macadamia nuts
- Preheat oven to 350u0b0F. Melt 1/3 of the chocolate with 9 tbsp butter in a bowl set over simmering water. Beat eggs in a large bowl. Stir in the flour, sugar, brown sugar, salt and chocolate mixture. Combine the ground coffee with the vanilla extract and add it to cake batter. Stir batter until smooth.
- Grease a 10 x 15 inch baking dish and dust with flour. Fill evenly with the batter and bake for about 25 mins. Meanwhile, mix the meringue pieces with the macadamia nuts. Melt the remaining chocolate with the remaining butter in a bowl set over simmering water. Stir the melted chocolate into the macadamia mixture. Spread over the cake and leave to cool for 1 1/2 hours. Slice the cake into approximately 90 small strips.
