Lemongrass Chicken

  1. Heat oil in a wok or large frying pan over high heat. Stir-fry chicken for 3-4 mins, until browned. Reduce heat to medium. Add lemongrass, chili and garlic and stir-fry for 1 min, until fragrant. Add broccolini, 1/4 cup water, fish sauce, sugar and pepper. Increase heat to high. Stir-fry for 2-3 mins, until broccolini is bright green and just tender. Add spring onions.
  2. Serve with steamed rice.
