Beef Burgers With Caramelized Onion
- 1 1/3 lbs lean ground beef
- 1/2 cup fresh breadcrumbs
- 2 tbsp barbecue sauce
- 1 clove garlic, crushed
- 4 None round rolls, split and lightly toasted
- 4 None lettuce leaves
- 1 cup roasted red pepper, drained and sliced
- 4 slices reduced fat Cheddar cheese
- None None Tomato sauce or ketchup, to serve
- None None Potato chips, to serve
- 2 tbsp butter
- 2 None red onions, sliced into rings
- 2 tbsp brown sugar
- 2 tbsp balsamic vinegar
- Combine ground beef, breadcrumbs, barbecue sauce and garlic in a large bowl. Season to taste. Shape into four patties. Place on a plate. Cover with plastic wrap and refrigerate for 15 mins.
- Meanwhile, for the caramelized onion, melt butter in a medium skillet on medium heat. Cook onion, stirring occasionally, for 8-10 mins, until very soft. Add sugar and vinegar. Cover and cook, stirring occasionally, for 4-5 mins, until onion is caramelized. Transfer to a bowl. Cool.
- Heat a large nonstick skillet on medium heat. Spray patties with no stick cooking spray. Cook for 6-7 mins each side, until cooked through.
- Serve patties in rolls with lettuce, red pepper, cheese, caramelized onion and tomato sauce. Serve with potato chips.
