Chocolate And Coconut Brownies

  1. Mix the creme fraiche or sour cream with 1/3 cup of the sugar to create a sweet cream mix, then add the coconut flakes. Using a bowl over a pan of hot water, melt the butter and the chocolate, stir and allow to cool. Meanwhile, beat the eggs and the vanilla extract in a bowl. Add the brown sugar and the rest of the sugar and beat for about a minute. Stir in the melted chocolate. Sift the flour, baking soda and cocoa and fold into the mixture.
  2. Grease a 12 x 15 inch pan and dust with flour. Pour the batter into the tray, distributing it evenly. Using a spoon, place dollops of the coconut cream mixture on top. Bake in a preheated oven at 325u0b0F for 35-40 mins. The brownie should be cooked, but still moist. Allow to cool, then cut into pieces and serve.
