Pork Skewers With Winter Salad
- 4 tbsp cider vinegar
- 1 tsp mustard
- 1 tsp sugar
- 6 tbsp sunflower oil
- 1 None shallot, peeled and diced
- 2 None clementines, peeled, pith and membranes between segments removed, juice collected
- 11 oz mixed salad greens, cut into bite-sized pieces
- 1 None apple, cored and sliced
- 1/2 lb pork shoulder, cut into thin strips then threaded onto wooden skewers
- 1/2 cup walnuts, roughly chopped and toasted
- None None crusty bread, to serve
- For the salad, whisk together the vinegar, mustard and sugar. Season then gradually whisk in 4 tbsp oil. Stir in the shallot, clementine segments and any reserved juice. Toss with the lettuce and apple.
- To serve, heat the remaining oil in a frying pan and saute the pork skewers for 4 mins, turning. Arrange the salad on serving plates and top with the skewers. Sprinkle with the walnuts and serve with crusty bread.
