Lamb And Edamame Soba Noodles
- 1/2 cup soy sauce
- 2 tbsp honey
- 1/3 cup mirin
- 1/2 tsp sesame oil
- 1 tbsp freshly grated ginger
- 3 None spring onions, chopped
- 1 lb lamb loin
- 12 oz soba noodles
- 1 1/2 cups shelled edamame beans
- 1 tbsp sesame seeds (black or white or a combination of both)
- 2 tsp vegetable or peanut oil
- 1 handful fresh mint leaves
- In a medium mixing bowl, whisk soy sauce, honey, mirin and sesame oil. Divide evenly between 2 bowls and stir ginger and spring onions into one bowl. Set aside. Add the lamb to the other bowl and toss to coat. Allow to marinate for 15 mins.
- Cook noodles and beans in a saucepan of boiling water for 4 mins. Drain well, rinse and add to ginger dressing. Toss well to combine.
- Meanwhile, heat a skillet over medium heat. Toast sesame seeds for 2 mins, or until fragrant. Remove from pan and set aside.
- Heat oil over medium heat in same skillet; using tongs, place lamb into skillet and cook for 1 min each side. Pour in marinade and continue to cook for 3 mins each side, basting regularly. Remove from pan and set aside to rest for 2 mins.
- Slice lamb on an angle and toss with noodles. Serve in bowls, garnished with mint leaves and a sprinkling of sesame seeds.
