Cilantro Fish Cakes

  1. Place fish, chutney, lime juice, egg white, chili pepper and garlic in a food processor. Process until finely chopped.
  2. Add breadcrumbs, cilantro and onions; process until combined and mixture comes together. Transfer to a bowl. Refrigerate for 10 mins.
  3. Shape mixture into 8 flattened patties. Heat oil in a large skillet on medium heat. Cook patties, in batches, for 2-3 mins each side, until golden and cooked through. Drain on paper towel. Garnish with additional cilantro. Serve with salad and sweet chili sauce.
