Lane Cake
- 1-1/2 c. butter or margarine
- 4 c. sugar
- 3-1/2 c. sifted flour
- 3 tsp. baking powder
- 1 c. milk
- 2 tsp. vanilla
- 8 eggs, separated
- 1 c raisins
- 1 c. chopped nuts
- 1 c. coconut
- 1 c. wine or bourbon
- Cream 1 cup butter and 2 cups sugar together until fluffy and light.
- Sift flour with baking powder.
- Add flour mixture to cream mixture alternately with milk.
- Add 1 teaspoon vanilla.
- Fold in fluffy beaten egg whites.
- Spoon batter into 3 9-inch greased and floured cake pans.
- Bake at 350u0b0 for 20-30 minutes.
- Beat egg yolks slightly.
- Add remaining sugar and butter.
- Cook in double boiler until thick, stirring constantly.
- Add raisins, nuts, and coconut.
- Stir in remaining vanilla and wine.
- spread filling thickly between layers of cake and on top and sides.
