Peach And Cardamom Chutney

  1. Combine reconstituted peaches or apples, 1 2/3 cups water, raisins, lemon zest and vinegar in a large, heavy-bottomed saucepan over medium heat. Bring to a boil, reduce heat and simmer, uncovered, for 10 mins, or until fruit is tender.
  2. Add remaining ingredients and 2 tsp salt. Simmer, stirring often, for 30-40 mins, or until liquid reduces and mixture thickens.
