Fruity Couscous

  1. Bring stock to the boil in medium saucepan.
  2. Combine couscous and hot stock in large heatproof bowl; cover. Let stand about 5 mins or until liquid is absorbed, fluffing with fork occasionally.
  3. For the lemon dressing, whisk all ingredients in a small bowl. Season to taste.
  4. Add remaining ingredients to couscous. Drizzle with dressing; toss gently to combine.
