Gazpacho
- 3 None medium red tomatoes, peeled, chopped, plus extra to serve
- 1 None red pepper, seeded, chopped, plus extra to serve
- 1 None Persian cucumber, peeled, chopped, plus extra to serve
- 1 None small red onion, chopped, plus extra to serve
- 1 clove garlic, sliced
- 1/4 None baguette, crust removed, torn into pieces
- 1/4 cup extra virgin olive oil, plus extra to serve
- 1/2 tbsp white wine vinegar
- 1/2 tsp minced chili
- 1/4 tsp sugar

- In a large bowl, combine vegetables and garlic. Add bread, olive oil, vinegar, chili and sugar. Cover with 1/2 cup water. Season. Cover with plastic wrap and chill for at least 3 hours.
- Transfer mixture to a food processor or blender along with 3.5 oz ice cubes and process until smooth. Strain then pour into serving glasses.
- Serve topped with a little tomato, pepper, onion and mini croutons.
