Chocolate Pecan Cookies
- 1 1/2 cups pecan pieces
- 8 tbsp (1 stick) butter, softened
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1 None egg
- 2/3 cup brown rice flour
- 1/2 cup cornstarch
- 5 oz semi-sweet chocolate, chopped coarsely, plus 1 oz, melted
- 24 None whole pecans
- Preheat the oven to 350u0b0F. Grease 2 baking pans and line with parchment paper. Process pecan pieces until they are ground finely.
- Beat butter, sugar, vanilla and ground pecans in large bowl with electric mixer until light and fluffy. Add egg; beat until combined. Sift flour and cornstarch; stir in cookie dough. Stir in chopped chocolate.
- Roll rounded tablespoons of mixture into balls. Place 2 inches apart on prepared pans; flatten slightly. Top with whole pecans.
- Bake for about 20 mins. Cool in pan 2 mins. Remove from pan; completely on wire rack. Drizzle with melted chocolate.
