Lasagna Milanese
- 1 pkg. (8 oz.) wide noodles
- 1 pkg. frozen chopped spinach
- 1 medium size onion, chopped
- 1 clove garlic, minced
- 2 Tbsp salad oil or olive oil
- 1 lb. ground beef
- 1 can (3 oz.) mushrooms
- 1 can tomato paste
- 1 (8 oz.) can tomato sauce
- 1 bay leaf, crumbled
- 2 tsp. salt
- 2 tsp. oregano
- 2 eggs
- 1/4 c. chopped parsley
- 1 c. cottage cheese (small curd)
- 1/4 c. grated Parmesan cheese
- 1 tsp. basil
- sharp Cheddar cheese
- Cook and drain noodles.
- Thaw and drain spinach.
- In medium size frying pan brown onion and garlic slightly in 1 tablespoon oil.
- Add ground beef. Cook until brown.
- Stir in mushrooms including the liquid, tomato paste, bay leaf, 1 teaspoon of salt and oregano.
- Simmer for 15 minutes.
- Beat eggs in bowl; pour over noodles that are rinsed with cold water. Mix well.teat second egg inn bowl.
- Add spinach, 1 tablespoon oil, parsley, cottage cheese, Parmesan cheese, 1 teaspoon salt and basil.
- Mix well. Pour 1/2 tomato mixture into oblong shallow dish.
- Layer 1/2 noodles on sauce.
- Spread the spinach mix.tepeat noodle layer. Top with rest of tomato mix. Cover.
- Bake in 350u0b0 oven for 45 minutes. Remove from oven. Arrange strips of cheese on top.
- Bake until cheese is melted (5 minutes).
- Serves 6 to 8.
