Vegetarian Nachos

  1. Preheat oven to 400u0b0F.
  2. Heat olive oil in a frying pan over medium heat. Sweat onion and garlic, stirring, for 5 mins, or until onion softens. Add tomatoes and kidney beans. Bring to a boil then reduce heat and simmer for 15 mins, stirring constantly, until thickened slightly.
  3. Arrange tortilla chips on a large ovenproof plate. Spoon bean mixture over top then sprinkle with cheese. Bake for 10 mins, or until cheese is melted. Serve topped with sour cream and fresh cilantro.
