Chutney And Mustard Meatloaf

  1. Preheat the oven to 350u0b0F. Grease a foil-lined 8 x 4 inch loaf pan
  2. Heat oil in a skillet on medium heat. Add the onion and saute for 4-5 mins, until tender. Cool slightly.
  3. Place ground pork, breadcrumbs, eggs, bacon, parsley, chutney, mustard and onion in a large bowl and season to taste. Mix until well combined. Spoon into prepared pan.
  4. Bake for 1 hour or until golden brown and cooked through. Let stand for 5 mins. Drain off any drippings, then remove meatloaf from pan. Serve sliced with salad and chutney.
