Halloween Ham With Potato Salad
- 2 1/4 lb medium-sized waxy potatoes, such as Yukon Gold or New Potatoes
- 1 None large green pepper
- 1 None large orange pepper
- 4 tbsp white wine vinegar
- 6 tbsp olive oil
- 1 tsp honey
- 1 tbsp mustard
- 1 tbsp vegetable oil
- 4 None small (smoked) ham steaks
- 4 None tomatoes, sliced
- None None few fresh arugula leaves
- None None scallion, ends cut into tassels, soaked in cold water, to garnish
- Boil the potatoes in a pan of lightly salted water for for 15-20 mins until tender. Meanwhile, halve and de-seed the peppers and flatten slightly. Use a small bat-shaped cookie cutter to stamp out 4 bat shapes from each pepper. Set aside.
- Whisk together the vinegar, olive oil, honey and mustard and season with salt and freshly ground black pepper. Drain the potatoes. Cool for 10 mins then peel and slice. Place in a bowl and pour over the dressing.
- Heat the vegetable oil in a large frying pan and fry the ham steaks over a medium heat for 4-5 mins until cooked through, turning once.
- Serve the steaks with potato salad, tomatoes, arugula and the pepper 'bats'. Garnish with scallion tassles.
