Orange Yogurt Loaf
- 2 1/4 c. flour
- 1 1/2 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. butter, melted and cooled slightly
- 2 eggs
- grated rind of 1 orange
- 1/2 c. orange juice
- 1/2 c. plain yogurt
- 1/2 c. powdered sugar
- Preheat oven to 350u0b0.
- Sift dry ingredients together into mixing bowl.
- In another bowl, combine melted butter (cooled), eggs, orange rind and orange juice.
- Blend thoroughly.
- Beat liquid into dry ingredients alternately with yogurt; mix until blended.
- Pour into greased loaf pan.
- Bake at 350u0b0 for 75 minutes or until loaf is golden and pulls away from sides of pan.
- Remove from pan and cool completely on rack.
- Blend powdered sugar with enough orange juice to make icing to spoon over loaf.
