Semolina Pudding With Oranges

  1. Slowly bring milk, butter, 2 tbsp sugar and vanilla extract to a boil. Remove from heat and slowly whisk in semolina. Return to heat, bring to a boil, stirring, and cook for 1 min. Remove from heat, cover and set aside for 5 mins.
  2. Meanwhile, mix cornstarch with 1 tbsp orange juice until smooth. Heat remaining juice with liqueur and 2 tbsp sugar, add cornstarch slurry and simmer, stirring, for 1 min until thickened. Fold in orange segments and set aside.
  3. Whisk egg white until stiff then add remaining sugar and a pinch of salt. Whisk egg yolk and cream then add to semolina. Fold in whipped egg white then divide between 4 serving bowls. Garnish with orange segments, syrup and chocolate shavings.
