Roast Beef With Herb Crust
- 2 None leeks, trimmed, washed and thinly sliced
- 1 1/4 lbs carrots, peeled and sliced
- 1 3/4 lbs parsnips, peeled and sliced
- 7 tbsp olive oil
- 3 lbs roast beef
- 2 tbsp wholegrain mustard
- 1 tsp honey
- 1 bunch parsley, chopped
- 1 bunch thyme, chopped
- Preheat oven to 350u0b0F. Toss vegetables in 5 tbsp oil, and season. Rub beef with salt and pepper. Heat 2 tbsp oil in a casserole dish and sear beef all over. Place beef on a baking tray and surround with vegetables.
- Mix mustard, honey, and half of the chopped herbs. Coat beef with honey mixture. Roast for 35-40 mins. Beef is ready when core temperature is 145u0b0F. Remove from oven and let rest for 10 mins. Serve with vegetables on a platter and garnish with parsley and thyme.
