Blueberry-Pecan Loaf

  1. Preheat oven to 350u0b0F. Lightly coat an 8x4 inch loaf pan with oil.
  2. Sift flour and spice mix together. Add sugar, blueberries, pecans, oat bran and 1 tbsp pumpkin seeds. Whisk together margarine, milk and eggs. Lightly mix into dry ingredients until combined. Transfer mixture to prepared pan, smooth top and sprinkle with remaining seeds. Bake for 50-55 mins, until a skewer comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
