Quick Chicken Cacciatore
- 1 medium green pepper, cut in strips
- 1 medium onion, cut in rings
- 8 oz. fresh sliced mushrooms
- 1 Tbsp. oil
- 4 chicken breast halves, boned and skinned
- 1 (15 oz.) can tomato sauce
- 1 (4 oz.) can chopped green chilies
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/4 tsp. garlic powder
- dash of cayenne pepper
- cooked rice or spaghetti
- In large skillet, saute green pepper, onion and mushrooms in oil for 4 to 5 minutes or until crisp-tender.
- Place chicken breasts over vegetables.
- In a bowl, combine tomato sauce, chilies and seasonings.
- Pour over chicken; cover and simmer for 20 minutes or until chicken is no longer pink and is tender.
- Serve over rice or spaghetti.
