Orange Syrup Cake

  1. Preheat oven to 350u0b0F. Lightly grease and line an 8 inch round cake pan with parchment paper.
  2. Beat butter 1-2 minutes, until creamy. Gradually add sugar and continue to beat 3-4 minutes, until thick, scraping down sides of bowl occasionally.
  3. Add eggs one at a time, beating well after each addition. Combine flour and baking powder and fold into wet ingredients, followed by ground almonds, chopped pistachios and orange zest.
  4. Pour into cake pan, smoothing top. Bake 35-40 minutes, until a skewer inserted in center of the cake comes out clean. Place pan on a wire rack and allow to cool.
  5. To make syrup, combine sugar and orange juice in a saucepan. Stir over medium heat until sugar dissolves. Bring to a boil and simmer 30 seconds without stirring.
  6. Transfer cake to a serving plate. Spoon over half the syrup and sprinkle with the toasted nuts to decorate. Serve with remaining syrup.
