Cured Salmon Salad

  1. Combine brown sugar, salt, sherry, spice and lime juice in a shallow dish. Add fish; turn to coat in mixture. Cover with plastic wrap; refrigerate overnight.
  2. For the dressing, whisk all ingredients and 2 tsp water in a small bowl.
  3. Pat fish dry and slice thinly. Toss greens, cucumber and dressing in a medium bowl. Divide among serving plates; top with fish.
