Cured Salmon Salad
- 1/3 cup packed brown sugar
- 1/4 cup sea salt
- 2 tbsp sweet sherry
- 1/2 tsp five-spice powder
- 1 tbsp lime juice
- 13 oz salmon fillet, skin and bones removed
- 4 oz mixed Asian greens or other salad greens
- 2 small cucumbers, seeded and thinly sliced
- None None FOR THE DRESSING
- 1 tbsp light soy sauce
- 2 tsp sweet sherry
- 2 tsp lime juice
- 1 clove garlic, crushed
- 1 None red bird's-eye chili pepper, finely chopped
- 1/2 tsp granulated sugar
- Combine brown sugar, salt, sherry, spice and lime juice in a shallow dish. Add fish; turn to coat in mixture. Cover with plastic wrap; refrigerate overnight.
- For the dressing, whisk all ingredients and 2 tsp water in a small bowl.
- Pat fish dry and slice thinly. Toss greens, cucumber and dressing in a medium bowl. Divide among serving plates; top with fish.
