Sardine Puff Pastry Tarts
- 1 sheet frozen puff pastry, thawed
- 1/2 cup spreadable cream cheese
- 1/4 cup sun-dried tomatoes in oil, drained and chopped
- 1 tbsp mild mustard
- 1 tsp dried oregano
- 1 can (4 oz) sardines in oil, drained
- 1 tbsp olive oil
- 1/4 cup Parmesan cheese shavings
- 1/4 cup arugula leaves
- Preheat the oven to 425u0b0F. Cut puff pastry into 6 squares. Place on a foil-lined baking sheet. Prick each square all over with a fork. Bake for 5-7 mins until beginning to puff up. Mix the cream cheese, chopped sun-dried tomatoes, mustard and oregano in a medium bowl until well blended.
- Spread the cream cheese mixture on each square leaving a 1/4-inch border all around. Top with the sardines and drizzle with a little olive oil. Return to the oven and bake for 10 mins. Top with the Parmesan cheese shavings and arugula and serve immediately.
