Tofu Skewers

  1. Toss tofu with garlic, ginger, 2 tbsp soy sauce and 1 tbsp sesame oil. Marinate for 1 hour. Meanwhile, cook noodles according to package instructions. Drain.
  2. Preheat broiler. Thread vegetables and tofu onto 8 skewers. Place on a foil-lined baking tray. Drizzle any remaining marinade over vegetables then broil for 20-25 mins, turning occasionally, until vegetables are tender.
  3. Heat remaining sesame oil along with vegetable oil in a wok or large frying pan. Add chili and stir-fry for 1 min. Add noodles and remaining soy sauce. Toss until heated through. Distribute noodles between 4 serving plates. Top with kebabs.
