Tofu Skewers
- 7 oz firm tofu, cut into cubes
- 2 cloves garlic, minced
- 1 inch fresh ginger, peeled, grated
- 4 tbsp light soy sauce
- 2 tbsp sesame oil
- 8.75 oz Chinese egg noodles
- 8 None small button mushrooms, washed
- 1 None zucchini, cut into chunks
- 1 None red pepper, cut into chunks
- 1 None red onion, cut into wedges
- 1 tbsp vegetable oil
- 1 None red chili, seeded, finely chopped
- Toss tofu with garlic, ginger, 2 tbsp soy sauce and 1 tbsp sesame oil. Marinate for 1 hour. Meanwhile, cook noodles according to package instructions. Drain.
- Preheat broiler. Thread vegetables and tofu onto 8 skewers. Place on a foil-lined baking tray. Drizzle any remaining marinade over vegetables then broil for 20-25 mins, turning occasionally, until vegetables are tender.
- Heat remaining sesame oil along with vegetable oil in a wok or large frying pan. Add chili and stir-fry for 1 min. Add noodles and remaining soy sauce. Toss until heated through. Distribute noodles between 4 serving plates. Top with kebabs.
