Crayfish And Watercress Sandwiches
- 1/3 cup mayonnaise
- 1/4 cup finely chopped dill
- 5 tbsp butter, at room temperature
- 10 slices white sandwich bread, crusts removed
- 1 lb cooked crayfish meat, sliced into thin rounds
- 4 oz watercress sprigs, coarsely chopped, plus additional sprigs, to garnish
- 1/3 cup finely snipped chives
- Combine mayonnaise and dill. Season to taste.
- Spread bread slices with 3 tbsp of the butter. Top 5 bread slices with mayonnaise mixture, then crayfish, watercress and remaining bread slices. Press down lightly; cut each sandwich in half.
- Spread snipped chives on a plate. Melt remaining 2 tbsp butter. Brush one long edge of each sandwich with melted butter; dip into snipped chives. Arrange on a platter. Garnish with additional watercress sprigs.
