Charlie'S Potato Tuna Chowder
- 2 1/2 c. diced potatoes
- 2 c. chicken stock
- 2 Tbsp. finely chopped onion
- 1/2 tsp. salt
- 1/4 tsp. sage
- 1/4 tsp. paprika
- dash of white pepper
- 1/2 c. sliced carrots
- 1/2 c. green beans, cut into pieces
- 1/2 c. sliced celery
- 3 c. milk
- 1 (6 1/2 oz.) can tuna fish, drained and broken up into chunks
- Combine 1 cup potatoes, chicken stock, onion and salt in a large saucepan; bring to a boil. Reduce the heat, cover and simmer around 10 to 15 minutes or until potatoes are tender.
- Add sage, paprika and pepper to the saucepan. With a fork, mash the potatoes in a saucepan.
- Add remaining potatoes, carrots, green beans, celery and milk to the mashed potatoes in saucepan. Bring to a boil, then immediately reduce the heat.
- Simmer for about 15 minutes or until vegetables are tender. Add tuna fish to the saucepan. Simmer for 5 minutes until well heated.
- Serves 4 to 6.
