Orange Mustard Chicken With Maple Vegetables
- 8 None chicken drumsticks
- 1/4 cup orange marmalade
- 1/4 cup orange juice
- 2 tbsp butter, melted
- 1 tbsp Dijon mustard
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 2 cloves garlic, crushed
- None None Maple Vegetables
- 6 None carrots, cut into wedges
- 2 None parsnips, peeled, cut into wedges
- 2 tbsp maple syrup
- 1 tbsp olive oil
- None None Salad greens, to serve
- Preheat oven to 400u0b0F. Line a baking dish with foil or parchment paper.
- Arrange chicken in a single layer in dish. In a small bowl, combine marmalade, juice, butter, mustard, syrup, oil and garlic. Brush liberally over chicken.
- Bake 35-40 minutes, turning once, until cooked through (juice will run clear when tested with a skewer).
- Meanwhile to make maple vegetables, line a baking sheet with parchment paper. Mix carrots, parsnips, syrup and oil together. Spread in a single layer on baking sheet and season to taste. Bake 25-30 minutes, until lightly golden and tender.
- Serve chicken with vegetables and drizzled pan juices. Accompany with salad greens.
