Tuna And Tomato Rotini
- 14 oz rotini pasta
- 7 oz grape or cherry tomatoes
- 2 tbsp balsamic vinegar
- 1 can (14 oz) diced tomatoes
- 2 cloves garlic, crushed
- 1/2-1 tsp red pepper flakes
- 1 tsp sugar
- 3 cans (5 oz each) tuna in oil, drained and flaked
- 1/4 cup chopped parsley
- None None Crusty bread, to serve
- Preheat the oven to 400u0b0F.
- Cook pasta in a large saucepan of boiling, salted water according to package directions. Drain well.
- Meanwhile, toss grape tomatoes and vinegar on a large baking pan. Season to taste. Bake for 6-7 mins, until tomatoes begin to burst.
- Combine canned tomatoes, garlic, red pepper flakes and sugar in a medium saucepan on low heat. Cook, stirring, for 1 min.
- Gently stir in tuna. Season to taste. Combine pasta, tuna mixture and roasted tomatoes in a large bowl. Sprinkle with parsley. Serve with crusty bread.
