Sweet Potato And Chickpea Burgers
- 1 lb sweet potatoes, peeled, chopped
- 1 (13.5 oz) can chickpeas, drained, rinsed
- 3/4 cup fresh cilantro leaves
- 1/4 cup curry paste
- 1 1/4 cups panko (Japanese breadcrumbs)
- 2 tbsp olive oil
- 4 small loaves ciabatta, halved
- None None lettuce leaves, to serve

- 3/4 cup Greek yogurt
- 1 None cucumber, deseeded, finely chopped
- 1 None Granny Smith apple, cored, finely chopped
- 2 tbsp finely chopped fresh mint leaves
- Steam sweet potatoes over a saucepan of boiling water for 10-12 mins, until tender. Transfer to a large bowl, mash and let cool.
- Combine chickpeas, cilantro and curry paste in a food processor. Pulse until chopped. Add to sweet potatoes along with 1 cup breadcrumbs. Season to taste. Shape into 4 flattened patties then coat in remaining breadcrumbs. Chill for 30 mins.
- Meanwhile, to make the apple raita, mix together yogurt, apple and mint. Season to taste.
- Heat olive oil in a large frying pan over medium heat. Cook patties for 4-5 mins per side, until cooked through. Drain on paper towels.
- Sandwich ciabatta loaves with lettuce, burgers and raita.
