Potato Sloppy Joes
- 2 lb package frozen potato wedges
- None None olive oil cooking spray
- 1 tbsp vegetable oil
- 1 None medium brown onion, finely chopped
- 1 None small red pepper, finely chopped
- 1 1/2 lb ground pork
- 5 oz frozen peas, thawed
- 2/3 cup tomato sauce
- 1 tbsp mustard
- 2 tbsp apple cider vinegar
- 2 oz Cheddar cheese, grated
- 2 None spring onions, thinly sliced
- None None mixed salad, to serve
- Preheat oven to 425u0b0F. Grease a baking sheet. Place potato wedges on baking sheet and spray with oil. Bake 25 mins or until golden and crisp.
- Meanwhile, for the Sloppy Joe mixture, heat vegetable oil in a large frying pan over high heat. Add onion and pepper and cook, stirring, 2-3 mins or until tender. Add pork and cook, stirring, with a wooden spoon to break up clumps, for 5 mins or until browned. Stir in peas, tomato sauce, mustard and vinegar. Bring to a boil, then reduce heat and simmer, uncovered, for 6-8 mins or until thick.
- Spoon Sloppy Joe mixture onto potatoes and sprinkle with cheese and green onion. Serve with salad.
