Potato Sloppy Joes

  1. Preheat oven to 425u0b0F. Grease a baking sheet. Place potato wedges on baking sheet and spray with oil. Bake 25 mins or until golden and crisp.
  2. Meanwhile, for the Sloppy Joe mixture, heat vegetable oil in a large frying pan over high heat. Add onion and pepper and cook, stirring, 2-3 mins or until tender. Add pork and cook, stirring, with a wooden spoon to break up clumps, for 5 mins or until browned. Stir in peas, tomato sauce, mustard and vinegar. Bring to a boil, then reduce heat and simmer, uncovered, for 6-8 mins or until thick.
  3. Spoon Sloppy Joe mixture onto potatoes and sprinkle with cheese and green onion. Serve with salad.
