Lentil Samosas
- 2 tsp oil
- 1 None onion, chopped
- 2 stalks celery, diced
- 1 None large carrot, diced
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1 (13.5 oz) can diced tomatoes
- 1/2 cup vegetable stock
- 7 oz red lentils, cooked, drained
- 4 sheets frozen puff pastry, thawed, each cut into 4 squares
- 3.5 oz Cheddar cheese, grated
- 1 None egg, lightly beaten
- None None salad, to serve
- Preheat oven to 400u0b0F. Line 2 baking trays with parchment paper.
- Heat oil in a frying pan over high heat. Saute onion for 2-3 mins, until tender. Add celery, carrot and garlic. Cook for 1-2 mins. Add curry powder and cook, stirring, for 1 min, until fragrant. Add tomatoes and vegetable stock. Simmer for 10 mins, or until vegetables are tender. Add lentils and let cool.
- Divide lentil mixture and cheese between squares. Fold over to form triangles, pressing edges together to enclose filling. Arrange on prepared trays and brush with egg. Bake for 25-30 mins, until puffed and golden brown. Serve with salad.
