Black Beans

  1. Wash the beans and soak in water with the green pepper.
  2. When the beans swell, cook in the same water until soft (approximately 45 minutes).
  3. Heat the oil in a frying pan and add onion and garlic, followed by ground green pepper.
  4. Add this along with salt, pepper, oregano, bay leaf and sugar to beans.
  5. Allow to boil for a further hour and add the vinegar and wine, cooking slowly for another hour.
  6. If there is still too much liquid, cook, uncovered, for a while.
  7. Add 2 tablespoons of oil just before serving.
  8. Serves 8 approximately.
  9. Serve over yellow rice.
